When you're ready for the big leagues
There are two kinds of cooks who buy copper cookware.
The first (not sure they can really be called cooks) want something pretty to hang in the kitchen. If you are such a person, do not buy this pot. Mauviel makes a nice line called "pour la table" that is much thinner, and you might as well save some money and buy that.
The second kind is perpetually frustrated by their cookware. The cast iron diffuses heat well, but doesn't react quickly enough when the heat is turned up or down on the hod. The stainless-clad aluminum reacts quickly, but doesn't diffuse the heat enough, so there are hotspots. The ancient original Revereware diffuses well and is responsive, but also warps and dents and scorches. These are the people who should be buying this pot.
