
Great Investment!
I own Mauviel pans as well as copper pans from Falk. The Mauviel M'heritage M250 ones are comparable to the Falks (they both have 2.5mm of copper and stainless linings.) The only difference, to me, is the look of the copper and the rolled lips. The Falk has a brushed outer finish while the Mauviel is shiny. The Falk has a rolled lip whereas the Mauviel has a straight edge. The performance of both is exactly the same. I absolutely love my Mauviel's as much as my Falk pans. The amount of copper used in making this pan results in both an expensive pan as well as a heavy one. It is, however, the only way to create the perfect pan. This pan has the advantages of copper (very fast response time and even heat distribution) as well as the ability to retain heat. As I also have some pans from their M'150 line (1.5mm of copper), I can tell you that 2.5mm of copper performs better. The 1.5mm ones aren't poor performers but they don't retain and distribute heat the way the heavier...
