Better Than The Traditional
I love tagine cooking. I purchased a traditonal clay one years ago. You had to soak it overnight in cold water before use. I hadn't used in in over a year and I knew I was taking a chance when I didn't bother to soak it. I even smiled as I watched the crack form and spread. At last I had an excuse to purchase this one!
Dishwasher safe! No soaking, although you do need to boil milk in it before the first use. This size feeds six. I lucked out and found a black one at Crate and Barrel Outlet.
Although I was annoyed with the upkeep of a tradtional tagine, I didn't want to switch to stainless steel or cast iron. This new glazed clay is a wonderful innovation.
This one cooks evenly. Cleans up easily and is nice enough to serve from at the table. If you are serious about the cuisine, this is the one to purchase. I'm concerned about the cast iron and stainless steel ones by other companies. Those aren't traditional materials and they conduct heat...
Great Cooking Experience
Wow, 90 bucks for a pot seems kinda hefty but this sucker really is worth it. Packaging was good, came fast and I've used it 4 times already in the past two weeks. This is not only for cooking moroccan food but others as well. Meats prepared on stovetop for 2 - 2.5 hours are incredibly tender and juicy, based over and over again with the lid shape designed the way it is. So far did beef, chicken, pork and gonna do a turkey breast later this week and I cant wait. I love it and leave it on my counter top cause I love the way it looks too! Seems pretty solid, i forgot I left it in the oven and had it pre-heating at 425 for an hour. Seems to be quite sturdy too!
Moroccan cooking
I am very pleased overall w/ this product. My husband is Moroccan and we cook tagines probably 5 times a week. We had been previously using a very small clay tagine from Morocco and needed a larger size. We have cooked a wide array of foods in this tagine and are very happy w/ all the results. Not to mention, it also looks wonderful displayed on our range top when not in use. The heat is evenly distributed and the steam is circulated well in the conical lid. The one thing I would do to enhance this product is to create a small hole for venting. For now, we prop it open on occasion w/ a wooden spoon. We have requested the smaller (9.5") tagine for a gift.
